Nana's Chicken Jambalaya

This recipe is courtesy of Tobey's mom.

Chicken Jambalaya

Ingredients:

6 chicken breasts, chunked
3 medium onions, chopped
4 ribs of celery, sliced
5 cloves of garlic, minced
2 bell peppers, chopped
1 small can tomato paste
1 large can of tomatoes
1 lb. kielbasa, sliced
1/4 tsp. cayenne pepper
1 tbsp. Worcheshire sauce
Parsley flakes, salt and pepper
4-5 cups of chicken broth
2 cups of uncooked rice

Cook chicken in broth. While chicken is cooking saute vegetables and spices. Add in tomatoes and paste. Add vegetables and uncooked rice to chicken broth mixture. Simmer until rice is soft and liquid is absorbed, about 20-25 minutes.
