Ham and Tree Casserole

Back in the day when the spawn were young, everything had to have a name. Every single dinner. Of course, these were the days I would have to pretend to pull green beans out of their ears to get them to eat them too. This is how secret family recipes like Frodo Hamburger came into being and also the Ham and Tree Casserole. The original recipe came from Granny MJ and it is one I have made so often there is no written recipe in this house.

Ham and Tree Casserole

1 bag of frozen broccoli florets (a.k.a. the trees in the casserole)
2 cups of cooked rice
2 cups of chopped ham, or chicken or pork (whatever leftover you have on hand)
1/2 bunch green onions, chopped
2 cans cream of chicken soup
milk
2 cups of cheese

Mix soup and cheese in a large mixing bowl. Add enough milk to make mixture soupy.

In a 9x12 pyrex dish, layer rice, followed by broccoli, ham and top with green onions. Slowly soup mixture over the top. Bake at 350° until golden and bubbly and oh so yummy; about 45 minutes. If ever there was a comfort food, this is it.
