Sunshine Cake: The Recipe


This is a simple and delicious cake recipe I received from one of the ladies at our church. I hope you enjoy!



Sunshine Cake

1 box yellow cake mix
1 large box instant vanilla pudding
8 oz. block of cream cheese - softened
2 cups milk
1 large and 1 small can of crushed pineapple, drained
12 oz. Cool Whip
1 cup coconut
chopped pecans (optional)

Bake cake according to directions on box in a large jelly roll pan for 12-15 minutes.


Beat together pudding, cream cheese and milk. Spread on cooled cake. Next spread drained pineapple over pudding layer and top with Cool Whip. Sprinkle on coconut and pecans.

i just read some of your recipes and boy am i hungry now, wow! i have already decided to try the cherry pie, the eclairs and i'd like to try this cake, it looks delicious, i love coconut!

we don't have yellow cake mix here, any ideas what i could use instead?

also, liver dumplings are very popular in austria, we eat them in beef broth, i will translate an austrian recipe for you, anything else you are interested in? we are quite good at cooking and baking here, let me know if you want some recipes :)
