3 Christmas Cookies:The Recipes


Easy Mexican Wedding Cookies

2/3 cup AP flour
½ cup chopped pecans
1 tsp. cinnamon1 pkg refrigerated sugar cookie dough

¼ cup powdered sugar, for rolling baked cookies in

Knead flour and pecans into dough. Make teaspoon size balls. Bake for 20 minutes on ungreased cookie sheet at 350 degrees. Roll baked cookies in powdered sugar while still warm.



Santa Surprises


2 sticks softened butter
1 cup peanut butter
1 cup brown sugar
2 eggs
1 tsp. vanilla
3 ½ cups AP flour
1 tsp. baking soda
½ tsp. salt
1 bag of Snicker’s miniature candy bars (or Milky Way or Dove or…)
Melted chocolate or almond bark for drizzling.

Cream peanut butter, softened butter and sugar together until fluffy. Slowly add in eggs, 1 at a time. Add vanilla. Mix in dry ingredients until combined. Chill dough 2-3 hours.

Shape into balls and flatten. Place unwrapped candy in center of flatten ball and wrap candy with cookie dough mixture.

Bake at 300 degrees for 10-12 minutes. Allow to cool and drizzle with melted chocolate.


Haystacks - Frodo's Favorite


2 lbs melted white chocolate
2 cups Rice Krispies
8 ounce jar of dry roasted peanuts
16 ounces crunchy peanut butter
2 cups mini marshmallows
1 bag butterscotch chips
2 cups Chow Mein noodles, slightly crushed

Into melted white chocolate add peanut butter and stir until smooth. Mix in all remaining ingredients and drop by rounded spoonfuls on lightly greased cookie sheet.
