Chicken Tetrazzini

This is such a delicious recipe that is one of Ohtobe's favorites. I must warn you though, it is no where near a "light on the calories or fat" meal. I made it once for a church function and I got so many compliments and even though it sat on the table next to someone else's version of the same recipe, mine disappeared and the other just sat there.

Ingredients:
8 chicken breasts
1 chopped red pepper
1/2 chopped yellow pepper
3/4 cup sliced mushrooms
8 oz cooked spaghetti
1/4 cup AP flour
1 cup half & half
1/4 cup butter
1 cup chicken broth
1 tsp garlic salt
pepper to taste
1/2 cup swiss chesse
1/3 cup grated parmesan

Sauté or bake chicken and cut into strips or chunks. Cook mushrooms,peppers and a splash of olive oil in large fry pan until tender. Add chicken and keep warm.

In large sauce pan melt butter and add flour to make a roux. Gradually add broth and half & half. Cook over medium heat and stir contstantly until sauce thickens. Add garlic salt and pepper to taste. Blend in cheeses until melted. Stir sauce into chicken mixture and serve over spaghetti.
