Recipe Thursday: Key Lime Muffins

Living in Florida is is hard to escape the Key Lime. I am not a real fan of anything Key Limey but you may be. Try this easy muffin recipe out:

Key Lime Muffins

2 cups AP flour
1/2 cup sugar
2 tsps baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter or margarine
1/2 cup Key Lime juice
2 eggs
1/2 tsp grated lime zest
1/2 cup milk

Preheat oven to 400°. Grease a 12 cup muffin pan or line cups with paper liners. In a large bowl combine flour, sugar, powder, soda and salt.

In a small saucepan, melt butter over low heat.

In a small bowl, combine juice, eggs and zest. Add melted butter and milk. Stir mixture until well blended.

Stir lime mixture into flour mixture until dry ingredients are thoroughly moistened. Do not over mix. Never over mix muffin batters.

Fill muffin cups and bake 15-20 minutes. Transfer muffins to a wire rack to cool for 10 minutes.

Glaze
2/3 cup powdered sugar
4 tsps Key lime juice.

In a small bowl, mix sugar and juice. Drizzle over the top of the muffins while they are still warm, serve immediately.
